The Best Mess!


What do you do with a box full of mushy apricots? You make jam of course! Lots and lots of delish Apricot Pineapple Jam. It makes a phenomenal lunch when combined with creamy peanut butter and our "evil" white bread. Lunch time? I think yes!



But first you have to make it through the gross sticky but totally worth it mess of making jam. Should I explain my job of grinding the already mushy apricots? Or when the hot jam seems to be out to get you when  it flies out of the boiling pot on to your unsuspecting skin? Or how its impossible to do on your own unless you have four arms? Or how the floor always seems to get sticky?


But does that stop us?? NO! Its always fun to get messy. I mean, who can turn down the excuse to roll in the mud? or in this case liquid apricots! And when the boiling mixture scours your skin you get a taste of the tasty concoction early! And besides, its always better to be with company, and you will always have a freshly mopped floor when you are done. 


So far from one box of apricots we have 49 Jars. Well, had 49 jars... We seem to eat it just as fast as we make it! Use one package of pectin and you get the perfect syrup for waffles. Two packets give you the ideal jam for toast and sandwiches! One and a half packets? I'll let you know! We just tried last night.


All in all? Canning is fun fun fun!
